Growing your own vegetable garden allows you to feed your family healthy, nutritious meals and snacks. The only drawback about growing your own vegetables is the fact that some plants may be too bountiful, supplying you with more vegetables than your family can eat in one season. You can freeze vegetables from the garden in order to preserve the food for use during other seasons.
Things You'll Need
FoodSaver
or
Plastic containers
Zipper bags
Pot
Harvest the vegetables from your garden. Arrange them in three piles: one to eat today, one to eat this week and one that you want to freeze for later use.
Wash the vegetables thoroughly. Allow them to air dry before moving on.
Cut and prepare the vegetables from the garden that you want to freeze. Most vegetables can simply be chopped before packing and freezing. The exception to this are vegetables such as tomatoes (which are technically a fruit) that have a high water content.
Prepare tomatoes by blanching in boiling water or roasting in the oven with olive oil. After they have been prepared, allow them to cool completely.
Pack vegetables using a FoodSaver (see link in Resources) to keep the vegetables from becoming freezer burned. If you don't have a FoodSaver, pack the vegetables from the garden into plastic containers (see link in Resources) or zipper bags. Do not leave any extra room in the containers or bags. If there is extra room, it will allow air to circulate, which can cause freezer burn within a few weeks.
