Jerusalem artichokes, also called sunchokes, are extremely hearty tubers and are among the easier edibles to raise. They will grow and remain virtually anywhere you put them. You can grown them from seed or root, and once planted are self-propagating. So make sure before you plant that you are certain of the location, as they are difficult to remove. As such, Jerusalem artichokes are commonly grown in contained beds, pots or tubs to keep them from spreading.

Jerusalem artichoke tuber
Soil patch, pot, or tub
Potting soil
Potassium-rich fertilizer
Mulch
Choose a patch of garden or prepare planting containers. If planting in a garden, select a patch where the Jerusalem artichokes can be planted in rows about two feet apart in full sunlight. For containers or tubs, fill with a standard potting soil.
Fertilize the garden or container with a potassium-rich fertilizer. Avoid fertilizers that contain high levels of nitrogen, as that causes the leaves to grow rather than the roots. Choose a hearty mulch such as wood ash to mix into the soil.
Cut a Jerusalem artichoke tuber into three pieces, each with at least one eye. Plant it about four inches deep in the soil and cover with mulch. If you plant in the spring, the artichokes will reach the surface just in time for the summer sun. Water only when the soil feels dry.
Pinch off the flowers as they appear, to allow for a heartier yield. Jerusalem artichokes are ready for harvest four to six weeks after the first flowers appear.
