Planting vegetables using astrological or moon signs is an age-old tradition. The use of moon signs is found in various ancient cultures. The use of astrology to predict when to plant is not as old but still has foundations in older cultures. Both types of signs correspond to specific months that coincidentally correspond to the proper growing seasons for various types of vegetables.

Moon Signs
Use moon signs to plan your garden. The moon has four phases: new, first quarter, full and last quarter.
Plant your root vegetables during the full and last quarter phase of the moon. Decreasing moonlight causes sap from these plants to move downwards into the roots and then slow down. This also helps build up sugar storage in the roots, causing bigger roots. Vegetables in this category include turnips, carrots, radish and rutabagas.
Plan plantings during the earth and water signs of Cancer, Pisces, Scorpio and Taurus. These signs correspond with early planting dates between March and July and with later crop planting dates between October and November. The optimal times for planting are between June 21 to July 22 or October 23 to November 21; these dates correspond with the signs of Cancer and Scorpio respectively.
Harvest your root vegetables during the full and last quarter moon signs. Harvest leafy crops during the new and first quarter moon signs.
Astrological Signs
Use the earth signs (Capricorn, Taurus and Virgo) to plan when to plant root vegetables. This is also a good time to transplant root vegetables. The months coinciding with Taurus (April through May) and Virgo (August through September) are optimal outdoor growing months. Capricorn (December through January) is good for starting seeds indoors.
Use the water signs (Cancer, Pisces and Scorpio) to plant leafy greens and vines such as lettuce, cucumbers, melons and broccoli. You can also transplant these types of vegetables during these months. The optimal times for water signs are under Cancer and Scorpio.
Use the air signs (Aquarius, Gemini and Libra) to cultivate and prepare the ground for planting. These signs correspond with the months of January through February (last frost), September through October (just before first frost) and May through June when you can switch from early crops to late-season crops. This is when the ground becomes fertile.
