The fresher sweet corn is, the juicier and sweeter it tastes. This means that whether you pick it yourself or you buy it at the market, you should bring it home and eat it as soon as possible. If you must store corn on the cob in the refrigerator, follow specific instructions to keep it as fresh, sweet and juicy as possible. With proper handling, you may preserve corn on the cob in the refrigerator for up to three weeks.
Things You'll Need
Large bowl
Bleach
Lemon juice
Plastic food storage bag (gallon size)
Remove the husks and silk from the corn on the cob.
Fill the large bowl with 1 gallon of water. Add about 10 ice cubes to make the water ice cold.
Measure 1 tsp. bleach and 1 tsp. lemon juice to the water and mix the ingredients well with a large spoon.
Place the corn in the water, submerging it completely beneath the surface.
Allow the corn to soak in the water for 15 minutes.
Remove the corn from the water after the time elapses and shake off the excess water.
Place the corn into the plastic food storage bag and seal the bag tightly.
Store the corn in the bag for up to three weeks. The corn should stay fresh for this extended time due to the bleach and lemon juice soak.
Tips & Warnings
Store unhusked corn on the cob in the refrigerator for up to two days. Do not wrap or cover it in the refrigerator.
