Spring or Fall
Since you never know when a lavender bush will decide that spring has arrived, it's hard to predict exactly when to trim in spring. The plant needs to be trimmed and ready to grow before new growth starts. Late summer or fall trimming has the plant ready long before spring growth begins.
Pruning
Cut lavender back to about 1/3 of the original size. This may seem extreme, but this type of trimming keeps the bush tight and dense, and may also extend the life of the shrub.
Harvesting
Harvest lavender in early summer when the first few flowers bloom. The best time is in the morning after the dew has dried. Lavender dries faster if you harvest after a few days without rain. Make cuts just above a leaf node, and take advantage of this opportunity to shape the plants as you harvest. Some types of lavender will send up a second flush of blossoms after shaping in early summer.
