Description
The jujube tree grows to 40 feet tall in Florida, and 25 to 30 feet tall in California. It has drooping branches and very hard wood. The leaves are small and oval, usually 1 to 2 inches long. The fruits ripen to red and have a single pit with two seeds.
Fruit
The immature jujube fruits are green. Before turning fully red they take on a yellow-green state, which is when they are usually eaten. At this stage they have an apple-like crispness. When fully red they wrinkle and soften but are still edible. Jujube fruits taste like a mix between apples and dates.
Growing
Jujube trees thrive in hot weather and will grow under harsh conditions. Their roots will send up suckers that should be promptly removed. They can be grown as patio trees in 15 gallon pots. Extensive winter pruning keeps the tree healthy. In the United States, the jujube tree has no serious disease or insect problems.
