Plants That Are Tubers. Tubers are swollen underground plant stems or roots. In all, 23 different tubers are commercially cultivated for human consumption. In addition to vegetables that are tubers, certain flowers like dahlias and some lilies are grown from tubers, also called rhizomes.

Potatoes
Potatoes are the most widely consumed tuber crop. Because of this, they are the plant most commonly associated with tubers. The potato family of tubers includes the hausa potato and the country potato.
Yams
Yams are also common tubers. Many different varieties of yams exist, including water yams, white Guinea yams, Chinese yams and false yams. The sweet potato, often called a yam in North America, is not technically a yam. In fact, it is not even a tuber.
Other Tubers
Although potatoes and yams are the most recognizable edible tubers in the United States, many other types exist. Chufas, flemingias, ocas and topees are among the other types of commercially grown tubers in South America.
